It's the second long week back to reality. How are you handling it? I'm doing ok. I'm feeling pretty inspired in the kitchen and enjoying eating again, which is refreshing after suffering countless aversions and intense cravings for months. Now I'm just hungry all the time. I'm feeling super pregnant and I'm almost 36 weeks... My history says this baby won't come until 42 weeks, but I'm still hopeful for 40 weeks and some twisted part of my brain that likes me to experience disappointment is telling me that 36 weeks is significant somehow.... oh but how?
Here are our plans this week! I'm making a whole chicken because we need broth again. I'm making spaghetti and meatballs because my oldest has requested it, saying it's been "a hundred days" since we ate it last. I chose cod because we had fish in the freezer. And the broccoli cheese soup was added because my friend made it this weekend and she loved it. I'm impressed by the amount of veggies in it and can't wait to serve it up!
Monday: Herb crusted cod (I used organic whole milk yogurt, yogurt cheese and Ian's gluten-free bread crumbs), rice and swiss chard with mushrooms
Tuesday: Easy roast chicken with roasted potatoes, carrots, and onions
Wednesday: Spaghetti and meatballs (I purchased collard greens to chop up into the sauce
Thursday: Broccoli cheddar soup (I'll be using a yogurt cheese, omitting bacon because we don't eat pork and using all organic veggies for this)
